Yes, indeed it is…7 weeks.  Monday December 3rd from 6-10 pm at "The Venetian" 546 River Dr in Garfield, NJ is where and when it will all occur, I hope you'll be able to join us as we celebrate the Holidays, new beginnings, and better health!!

Speaking of better health, anyone who has had bariatric surgery has directly experienced the benefits: no more diabetes, improved blood pressure, sleep apnea that is dramatically improved or completely gone, no more of the back and joint pain etc.

I suspect you know people (friends, co-workers, relatives) who are also suffering with excess weight.  I would invite you to bring them to the Holiday Party so they can see for themselves the benefits of this life saving surgery. They will also see that everyone is eating 'normal food' (the food at the Holiday Party is absolutely delicious and all bariatric friendly).  So start making a list of the people in your life who you know would benefit and invite them, it is a great way to 'pay it forward'.

MARISOL'S NUTRITIONAL CORNER  

 

Fall is my favorite time of year.  With lower temperatures in the forecast, its a great time to make hearty, healthy soups at home.  I found this recipe from Ellie Krieger's cookbook Comfort Food Fix.

 

Cream of Mushroom Soup

makes about 6 1 cup servings

 

Ingredients

    1 tablespoon olive oil
    1 small onion, chopped
    2 cloves of garlic, minced
    10 ounces white button mushroom, thinly sliced
    2 large portobello mushroom caps, black gills removed, thinly sliced (about 10 ounces)
    4 cups of low-sodium beef broth
    1 1/2 teaspoon chopped fresh thyme
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    3 tablespoons heavy cream

PREPARATION  

    Heat the oil in a soup pot over medium heat
     Add the onion and cook, stirring occasionally,  until softened and translucent, about 4 minutes
     Add the garlic and cook until fragrant, about 1 minute
    Add the mushrooms and cook until they release most of their liquid, 7 to 8 minutes
    Remove 1/4 cup of the cooked mushrooms and reserve
    Add the beef broth and thyme and bring to a boil
    Reduce the heat to medium low and simmer for 10 minutes
    Stir in salt and black pepper and cook an additional 3 minutes
     Remove from the heat and allow to cool slightly, about 15 minutes
    Working with about 1 cup at a time, puree the soup in a blender until it is mostly smooth but still has some chunks, and then transfer it to another pot.  (Alternatively, you can use an immersion blender.)   
    Stir in the cream and warm through over medium heat.  Serve garnished with the reserved mushrooms.
